Fire-N-The Hole Wood Fired Pizzas: ‘Just What The Doctor Ordered’ and ‘Horsin’ Around’ Photos by Melissa Donald
Looking for something different and delicious at the Chow Wagon this year? I checked out the vendors this year and will show you what’s new and fantastic!
Fire-N-The Hole’s individual pizzas are a great place to start. Customize your own, or better yet, try one of their specialty pizzas like the ‘Just What The Doctor Ordered’ shown above. This pizza has pears, olive oil, Sicilian seasonings, Roma tomatoes, fresh basil, prosciutto, mozzarella and parmesan cheeses. The subtle sweetness of the pear with the prosciutto creates a surprisingly good combination with the rest of the ingredients. I enjoy fruit on my pizza, so this was a real winner for me.
Another specialty pizza to try is ‘Horsin’ Around.’ Mashed potatoes, prime rib, horsey sauce, onion, portobello mushroom and a blend of cheeses.

These wood-fired pizzas are ready in a matter of minutes. As you enter the Chow Wagon, Fire-N-The Hole is to the left — closer to the river.
Firehouse Ice Cream
Right next door to Fire-N-The Hole you can grab dessert at Firehouse Ice Cream, the only walk-in concession in the country. The decor has a firehouse theme.

Of course, there’s iced tea. King’s has a delicious sweet tea — not too sweet but sweet enough! It’s refreshing on a hot day and located in the center of the Chow Wagon.

This year’s 2016 Deby Burger (which is sponsored by the Kentucky Beef Council and coordinated by the Kentucky Derby Festival) is the SmoFried Cheese-Stuffed Burger created by Maurice Williams of Louisville. This burger is delicious and the ;recipe is easy to make. Check out the full recipe and story here.
2016 Derby Burger: SmoFried Cheese-Stuffed Burger — hot off the grill
Stuffed with green peppers, onions, feta and blue cheeses and seasoned with salt and black pepper, the Derby SmoFried Cheese-Stuffed Burger can be found under the tent next to Cox’s Entertainment concession. If you’re making this burger at home, check out the meat departments at your local Louisville Kroger stores for the ingredients.

And lastly, a real special treat! Save room for dessert, or do dessert first. You must try something — really anything — at the S’more Mobile. Homemade marshmallows can be found in each item at this concession.
I started with the S’more Frozen Chocolate, which has whole milk blended with house-made chocolate mix and is garnished with a homemade graham cracker. It’s topped with a homemade toasted marshmallow. Cool, creamy and delicious! S’more Hot Chocolate is also available with the same ingredients.

Other treats available at the S’more Mobile are S’more on a stick and grab-and-go treats such as the S’more Marshmallows and a rich and decadent Rocky Road Treat (Rice Krispy treat with homemade marshmallows encased in milk chocolate).

Of course, the classic favorite concessions are also available at the Chow Wagon, such as funnel cakes, fried onion rings, turkey legs and corn dogs. There is something for everyone at this year’s Chow Wagon.
