Did you see these Derby jello shots?

Looking for a fun twist on an old recipe? If you thought jello shots were only for college days and bachelorette parties, we are bringing them back in a new way.... Derby style. In case you missed it in the magazine this month, Paige Rhodes of My Modern Cookery has created this simple recipe for mint julep jello shots- a great way to add a fun twist to your Derby party this year!

Mint Julep Jello Shots

3/4 cup of sugar
3/4 cup of water
1 cup of bourbon
2 packs of unflavored gelatin
3 bunches of mint leaves

Heat the water and the sugar over medium heat until the sugar dissolves. Add 1 bunch of mint leaves to the syrup and simmer for two to three minutes before discarding the mint. Reduce heat to low and allow to cool slightly. slowly stir two packets of unflavored gelatin into 1 cup of bourbon.

Combine with the mint simple syrup mixture and stir over low heat for 3-5 minutes, until the gelatin is completely dissolved and has had time to thicken slightly.

Pour into an 8x8-inch pan, cover, and refrigerate for at least six hours until set completely. Each batch makes about 25 jello shots but can easily be doubled.
