Try this transitional recipe for your fall parties!

When transitioning into fall, summer activities we once loved such as grilling out can begin to get a tad boring. Know how to spice up your fall parties while still slightly hanging on to summer. Make the transition sweeter by using as much fresh produce as you can- since that is one of the many reasons we all love summer so much. Try this recipe to spice things up this season!

Mango Corn Salsa 
1.Corn on the cob, white and yellow.
2. Red Onion, diced in tiny pieces (no one wants to bite a big chunk of red onion)
3. Mango (fresh, or canned)
4. Fresh Cilantro

1. Rub butter, salt and pepper on the corn, and place on a med-hot grill for 5-10 minutes, or until grill marks appear. Rotate as needed. 
2. Once cooled, remove the kernels, and set aside. 
3. In a large bowl, combine the cooled grilled corn kernels, diced onion, and mango chunks. Stir to evenly mix all ingredients. 
4. Cool in the refrigerator
5. Add fresh cilantro, once you are ready to serve. 

Tip for using acorn squash as a serving bowl: I found tiny tuperware bowls at my local kroger, and placed them inside a hallowed acorn squash. They were clear, so no one noticed them, but they provided structure for the dipping sauce.
