Appetizer - Smoky Baby Blue Taters

A dish that Vikki Stone adapted from a recipe created by Rachael Ray, these potatoes are delicious and easy to make. Serve them up at your next holiday party or family gathering. You won't be sorry!

Smoky Baby Blue Taters

Recipe: 
20 new red potatoes washed, dried and halved lengthwise
3 tsp. extra-virgin olive oil
1½ cups light sour cream
1 cup crumbled blue cheese
2/3 cup crumbled cooked bacon
¼ cup fresh curly parsley
¼ cup red onion, finely chopped
Bourbon smoked paprika - made by Bourbon Barrel Foods in Louisville, KY
Seasoning Salt
Dash or two of hot sauce  

Preheat oven to 400 degrees. Toss cut potatoes and olive oil in medium sized bowl. Place potato halves cut side down on a baking sheet and bake until skins are crisp (20-25 minutes) and set aside to cool on serving platter.

Scoop the center out of each potato half and place in a medium bowl. Stir in the sour cream, blue cheese, bacon, parsley and red onion. Add seasoning salt and hot sauce to taste. Fill each potato skin with the mixture. Garnish with bourbon smoked paprika and parsley.

Another great idea from Vikki this holiday season- try her annual holiday party idea. Each year, Vikki has her guests bring a bottle of wine that is covered so as not to reveal the label. Wines are then grouped and given a number. Reds, whites and roses are all situated separately. The wines are rated by a point system. Whoever brought the wine that receives the most points wins a drink related gift (coasters, decorative wine stoppers, wine charms, wine glasses, etc.). A fun way to learn about more wines while socializing with friends!
