Holiday Bites - Marinated Cheese With Olives

Appetizer Marinated Cheese

This recipe was found while visiting The Biltmore Estate in North Carolina. Retired science teacher Suetta Tingler collects recipes during her travels and exchanges them with friends on their birthdays. This recipe for marinated cheese is one you can make ahead of time and store in the refrigerator. Visually pleasing and tasty, this dish is great served with pita bread and hummus or any other Mediterranean-style spread.

Marinated Cheese With Olives

1/2 cup extra virgin olive oil
1/2 cup white wine vinegar
3 tablespoons fresh parsley
3 tablespoons minced green onion
1 teaspoon sugar
1/4 cup fresh basil (fine chopped) 
1/2 tablespoon salt
1/2 tablespoon black pepper
3 or more cloves garlic (minced)
2 oz jar diced pimentos (drained)
8 oz Sharp Cheddar cheese (cubed)
8 oz Monterey Jack cheese (cubed)
8 oz whole black olives (drained)
8 oz whole green olives (drained)  

Combine all ingredients except cheeses and whole olives in a jar; cap tightly and shake vigorously. Place Cheddar and Monterey Jack cheeses along with whole olives in a covered container. Pour marinade over cheese mixture and let si t in refrigerator at least 8 hours before serving. This recipe can be stored, covered in refrigerator for up to three weeks and brought out as needed when guests stop by during the holidays. Simple and delicious!
