Appetizer - Banana Croquettes

Looking for an appetizer that will cater to kids as well as adults? Then you must try this recipe for Banana Croquettes, a family favorite from Catina Rivera that has been passed down from her great-great-grandmother.

1 cup apple cider vinegar
2 cups white sugar
8 eggs, beaten
Approximately 6 bananas
1/2 lb crackers (ground)
19oz jar of peaunts (ground)

Mix the first three ingredients. Cook in microwave, beating several times to keep smooth. Microwave until thick. Allow to cool. (This can be put in a jar and stored in fridge for 4-6 weeks).

Combine the crackers and peanuts (this can be stored in the freezer). Slice bananas into thirds. Coat bananas with the dressing and roll in the nut mixture. Keep in fridge until ready to serve.

A sweet alternative to a savory appetizer and one that is a big hit with the kids!
